Did I have you at butter?

I have a binder that holds recipes that I’ve either made or want to make. I cannot believe this one has been in there since 2000 and I just made them for the first time last week for a luncheon. OMG. So easy and so delicious.

This recipe is from Southern Living (which my friend Ginny Brewer calls The Bible) and they’re made from three ingredients, two of which are butter and sour cream. What’s not to like?

Butter Muffins (Southern Living, November 2000)

2 cups self-rising flour

1 8-ounce container sour cream

1 cup butter, melted

Cooking spray


Stir together the first three ingredients just until blended. Lightly spray mini-muffin tins. Spoon batter into pans, filling to the top.

Bake at 350 degrees for 25 minutes or until lightly brown. Yield: 2 ½ dozen muffins. You can freeze some of them and just defrost as needed (which might be daily).

    I’m pretty sure bacon and cheese added to these would be heaven too.
