I need a Christmas cookie

Not to eat. I need a Christmas cookie that can go on the sweets tier at the St. Paul’s English Tea. It’s in a  month and I’m stumped. As the food chairman for the tea, I have wrestled with this dilemma for at least six years.

My savories are rock solid. Blue Moon’s (amped up pimento cheese) are rock stars. Egg salad is stellar. Chicken salad a work of art. Turkey and arugula mayo sandwiches a sensation. And I can’t even talk about how good the cucumber sandwiches are. I cannot even talk about it.

Sweets. Three out of four. I have the luscious chocolate mint mousse cups, the silky lemon curd tarts and a new contender, chess squares with nuts. It’s the fourth one that’s still eluding me.

We’ve tried various sweets over the years that just haven’t stood the test of time for one reason or another. And it complicates the problem that I’m a cook, not a baker. In fact, two of the disgraced entries were mine — a disastrous brownie bite that wouldn’t release from its foil baking cup (like the brownie was welded to it) and some form of cookie (see photo above) that spread out to the dimension of a salad plate.

Here are the requirements: The sweet has to be a knock out. The baker or dessert maker must make 300 identical pieces. And the pieces have to be small to fit on a plate with three other sweets.

So, my faithful readers, what have you got? Hit me with a great idea. If you’re a Woman of St. Paul’s and want to step up to the plate, please do. Help. I’m out of ideas.

    Looking through a couple of cookbooks from tea rooms. Irish coffee cookies, Biscotti Bites, Toasted pecan butter cookies, Almond Shortbread, Chocolate checkerboards, Chocolate mexican wedding cookies, chocolate drenched apricots, snappy scotch balls, browned butter madeleines, pecan muffins with strawberry butter stars, orange muffins with raspberry butter stars.

    My go to cookie is a Milky Way, Butterfinger and chocolate chunk cookie by Picky Palate. I give them to friends at Christmas and I am always asked to bring them to any event I go to.
