O.K., ya’ll, here’s your Christmas present. I promise this will just make you smile when you eat it. It’s Pig Candy. I learned about this treat when I read The Sweet Potato Queens’ Big-Ass Cookbook and Financial Planner. But then I found out that a bunch of other people also thought this up, so I don’t think the recipe is a well-guarded secret.

And it’s really not a recipe, but more of a procedure. You take your favorite bacon. I am fond of Niman Ranch Applewood Smoked Bacon, but really is there a bad bacon? Heat up your oven to 350 degrees. Take theĀ  bacon and coat it with dark brown sugar. Put some foil on a cookie sheet with a rim and then put a rack on top if you have one. Put the bacon on the rack and bake it for about 20 minutes. That’s it! If you don’t have a rack, then you might have to turn it over once.

Pig Candy is so utterly absurd and delicious you will want to eat a whole plate of it. I have Jewish friends who make an exception to their dietary laws just for this one thing.

So I hope everyone has had a wonderful Christmas. I just have to share this one thing with you from my day. We always go to church Christmas morning. And afterward we have Dinner at Bethlehem where we get together with some of our friends outside of St. Paul’s who we have helped along the way this year for a big Christmas lunch.

While we’re eating one of the kids ran up and said, “It’s snowing!” Well, it hardly ever snows on Christmas in Tennessee so we all jumped up and ran to the windows. Sure enough! You can’t see the flakes here, but you can tell what those kids are doing because you used to do it yourself if you lived anywhere where it snows. They’re catching snowflakes on their tongues, of course.

Merry Christmas to all, whether you got snow or not. Tomorrow, the Publix will be open again and you can get some bacon and brown sugar for that Pig Candy.
