My own pizza oven

Some techniques just change your life as a cook. Learning how to properly salt food was one for me (much more than you think, until you taste that zing), fresh lemon juice is always your friend and this nifty trick for turning your oven into a pizza oven.

It just kills me to spend $16 on a pizza. I now can make a better pie than any pizza shop I know. You buy your dough from the grocery, pick the sauce and toppings you like, and then convert your oven to blasting hot.

Here’s how (and not my invention). You have to have a pizza stone, a good thick one. I’ve had mine for years and it just lives in the oven at all times. Then preheat the oven to 500 degrees for an hour. You have to make sure the stone is blazing hot. Dust whatever you’re using to get the pizza in the oven with corn meal so the pie slides off easily.

Then into the oven for 4 minutes. After four minutes, turn the oven off and the broiler on. Broil the pizza for about 5 minutes. The stone is in the middle of the oven, by the way.

You can see that this method produces a crispy crust with nice areas of char. I know, right? Pizza perfection. For about $6 a pie.
