Mushroom duxelles-stuffed pork loin

Ya’ll know you want some of this and it’s so easy to do. If you are leery about investing in a bottle of Madeira, which the recipe calls for, don’t be. It costs maybe $5 and it is the best flavoring for reducing so many vegetables. You can find it at your local liquor store if you live in Tennessee, which does not sell booze in the supermarket. If you live in a more forward-thinking state, good for you.

By the way, did I ever tell you about moving to Reno, Nevada in the late 1980s and the revelation that this was the place for me? About two weeks after we moved, I went into the grocery store and not only did I find that there is an entire liquor section there, but a nice lady in a hairnet offered me a sample martini! Yes!
